THE SWEET:　KOMPEITO - Candy of the Slow-craft world
Kompeito is still being made in the same traditional method by spinning graulated sugar in a large heated rotating tub (like in laundryland).  Sugar syrup is added slowing to coat the sugar and each day the candy will grow (cystallize) about 1mm in size.  For it to take the final iconic shape, it takes the artisan about 14 days to tend and "grow" the candy.   
We have chosen this kompeito candies that gives a flavorful first punch of tea bitterness, quickly followed by the sweetness of sugar.  It is an exceptional-quality sweet that grownups would love.  Personal favorite is HOJICHA tea, the roast tea is so unique and flavorful that it has a tone of popcorn.
